Here's one simple, delicious and zesty way to enjoy this Washington beauty: Cameo Apple Salsa Preparation time: 5 minutes Refrigeration time: 1/2 hour Makes: 4 cups 2 cups Cameo apples, diced 1/2 cup red onion, diced 1/2 cup (1 large) Anaheim chili pepper, finely chopped 1 jalapeño pepper, finely chopped (optional) 1/4 cup lime juice 1 Tbsp. chopped fresh cilantro 1/4 tsp.

salt 1/2 tsp. freshly ground black pepper Combine all ingredients in large bowl and mix well. Cover with plastic wrap and refrigerate 30 minutes or until ready to serve. Tip: For a snack, serve with tortilla chips or use as a topping to accent a meal of grilled chicken, fish or pork.
